Crack the can, pour and it’s a glass of dark chocolate/black coffee with a caramel head. Smells like unwrapping a chocolate bar along with a chip of baker’s chocolate, roasted coffee beans, and a little toffee. Kicking it back and there’s tastes of deep very dark chocolate and almost bittersweet baker’s, really roasted toasted black coffee (but not Charbuck’s) and burnt brownie edges. It’s a crisp yet smooth easy drinker and not overly heavy. I would love work on a pint for a while and follow up with another. Delicious!

Pairs with Cheez-It’s: NO!

It’s that time of the year again! No not that darn pumpkin spice crap. It’s stout season. Actually I ❤️ stouts 365, but then I’m a chocoholic. If I could I’d swim in a vat of it but that might end up a bit messy. A better idea would be to cue up some old Armin van Buuren and take a 4-pack of these cans for an evening dancing under the twinkling night sky.

Deep dark of night with a small caramel head that fades. Oh man, just raise that mug and here comes that deep smell of dark chocolate, baker’s chocolate, coffee grounds, toffee, and a hint of black pepper. Memories of years past are being conjured up. Now after all that here comes the taste. There’s again cark chocolate that goes bitter super dark with a crispy dry end, burnt brownie edges, black coffee, and a smidge of vanilla. It’s just black velvet and mouth coating, and after all these years it is still a constant friend.

Pairs with Cheez-It’s: oh God no!

When I saw this beer in my friend’s hand, I felt like Christmas came early! It has been years since I have had this glass of deliciousness. It was back at the old (and now gone) Mugs Alehouse, and anytime I saw it on their list, it was an immediate go to order. How on earth had I lost touch with this old bestie. I totally blame myself for not searching it out. Feels so good to be reunited!

Deep dark of night thick black coffee with a small brown head that runs away as fast as possible. Chocolate charges out of the can and up your nose during the pour along with coffee, creamy peanut butter, smoky burnt brownie edges, and a wiggle of vanilla. Oh man, first sip and second and then third and damn that’s good! Seriously! It’s like someone smashed chocolate peanut butter cups with brownies coated in espresso and then the vanilla hits you. Also a lick of the honey roasted peanuts. I’m in trouble now that this is 15.5%. Big trouble!

Pairs with Cheez-It’s: NOOOOOOOOOO! I’d rather the Reaper come find me.

My last Nightmare was their “Colombian Necktie” back when they were still in search of new artists and Billy’s sketches were still being used. From this can alone, the open call really worked. Alexandros Pyromallis’s seriously intricate art rocks! Billy and his sister must have a very loving and mischievous camaraderie, for him to have her depicted doing what she loves (broadcasting on B95.5 FM  Albany from Poughkeepsie to Vermont.) and getting impaled by Death’s arm with a blood splattered garden gnome hanging out nearby. Just beautifully twisted. That being said, he did also create Matricide and Patricide brews for his parents. I guess you’ll know you’re truly and dearly loved by Billy if he dedicates beer and art to your potential demise.

Black coffee pour with a caramel head. Dark coffee and chocolate float out first. Next there’s candy sprinkles like the ones on cupcakes (you know those cupcakes you eat in the dark while watching bad tv you’d never admit in public), brownie edge of pan corner goodness, and a bit of hoppity. Kicking back coffee, chocolate brownies again with more burnt ends, and a touch of vanilla marshmallowy cream. It’s not heavy or thick, very easy to drink, and sweet with a nice bitter bite at the end.

Pairs with Cheez-It’s: makes it a lot sweeter

A father, sons, and a best friend came together to make Schilling and Resilience a reality in Littleton. Their backgrounds vary from dad being a retired veterinarian, one son has research published on international security matters, another came from a mix of business and religion studies, and their friend was a chemistry teacher and coach. Other than beer, they also share a love of fishing/fly fishing and their community. Their epically long list of Schilling Beers are influenced from their experiences and flavors of Europe and the brews found there, but Geppetto (even though it’s an Italian name) is from their Resilience line which is dedicated to American ales, hoppiness, and is an expression of the struggles and successes of their making their way in the beer realm. From what I’m reading on the FB page, their resilience is paying off and they hope sometime this month to reopen their brewpub and kitchen for indoor dining. The tasting room and store is already open from 12-8 for beer and their delicious looking pizzas. They’re even looking forward to events from Oktoberfest, their anniversary, and the R.J Schilling Fly Fishing Festival’s charity event. Looks like life is on its way to getting brighter and brighter.

After cracking open the can, it’s a dark chocolate pour. As it tingles my nose, there’s chocolate, caramel, nutmeg, and a hint of Cel-Ray (wow that’s something I haven’t thought of in a while). Hmmm. Sipping…again there’s chocolate, caramel, and also toasty coffee. It’s a refreshing bitter stout and great for this blazing hot weekend.

Pairs with Cheez-It’s: Mellows the bitter, and makes the chocolate more of a baker’s chocolate cookie.
