Flying into the Holidays on Dragonwings

Woodstock Brewing
Baby Dragon
Pale Ale
5.5% ABV
Phoenicia, NY
Founders: Rick Shobin and Scott Shimomura
(Originally caught in the wild at Sugarburg)

Warm golden pour with full on thick white foamy head, and lots of teeny tiny active bubbles. It’s a crisp fresh breath of air with an easy breezy mix of tangerine, grapefruit, a little lemon zest, and a pinch of pine needles that make me go “Hello Christmas!” Sipping and again it’s crisp with some welcome bitter herbiness, lemon, pineapple, and mixed citrus zest. This is one easy drinker.

Pairs with Cheez-It’s: perfect snack pairing

So for those of you that love holiday trivia and the chance of winning a $500 tab, then you’ll want to drop by Sugarburg (the place I caught this dragon in the wild). The place looks like Christmas exploded in it and there’s 15 hidden items/scenes from your favorite movies/shows. Just grab a drink, wander through the wonderland, find those festive moments, fill out the answer sheet and cross your fingers! Happy holidays and keep your eyes out for mistletoe!

Beer is Our Food

Moody Tongue
Scotch Barrel Aged Peated Scotch Ale
2019 Vintage
Aged in Laphroaig barrels
11.8% ABV
Chicago, IL
Brewmaster Jared Rouben
Executive Chef: Jared Wentworth

Mahogany with a small pale beige head. Pop the cap and oh yeah baby it smells like toffee, caramel, brown sugar, and warm smooth peat. This is sooo sleek! Tastes of smoky peat beautiful scotch, toffee, and something with a bitter herbiness or a little burnt cinder edge of a brown sugar cookie that balances it all out. This bottle is freaking fab and I’m glad I took the chance on it!

Pairs with Cheez-It’s: BLEEP NO!!!!

What do you get when you pair a brewmaster with an established culinary and brewing background with a 10 time Michelin star executive chef…well you get a Michelin 2 star brewpub. You can either go relaxed and laid back in “The Bar” or fancy it up in “The Dining Room” where you can get a tasting menu/beer pairing. Either choice you’re going to get a unique experience with their “culinary brewing” and as they say “Beer is our food”. I so want to get my hands on their “Shaved Black Truffle Pilsner”. Yeah, yeah I can hear some of you shaking your heads, but if it’s as good as their “Scotch Barrel Aged Peated Scotch Ale”, I’m all in.

A Good Fresh Roar

Farmhouse Ale
Malts: Pils, Flaked Wheat, and Honey Malt
Hops: Crystal, Sterling
Secret Techniques: Free-Rise Fermentation, Prey Selection
6.5% ABV
Chicago, IL
Brewers and founders: John Laffler & David Bleitner

Golden with green hints with lots of active bubbles and frothy foam. Apple sweetness greeting my nose, along with pineapple, lemon hints, and a teeny tiny funk after a bit. It’s a crisp, dry and delightful sip of apple, tangerine and others from the citrus bowl, lemongrassiness, and mellow lemon fizz that is not tart with malt.

Pairs with Cheez-It’s: NO NO NO NO NO! Gives a metallic taste…bleah

This majestic beast has a gentle side that you can kick back with but enough of a roar to knock down the spiciest of dishes. Would also be awesome with shishito peppers to cool that one in ten surprise, or even better yet Carolina Reaper Ribs. I can already feel the sweat down my neck.

Beer Has No Gender

Japas Cervejaria Artesanal
Sawā Peach
Sour Ale with Peach
Peaches are grown in Brazil and Japan
4.7% ABV
São Paulo, Brazil and Chicago, Il
Brewers: Maíra Kimura, Yumi Shimada and Fernanda Ueno

Hazy active golden candy yellow color. The closer the glass gets, the more my nose is tingling with citrus. Lemon, lime, a little mandarin and of course fragrant peach. Light, fresh, crisp tastes…peaches with a squeeze of that citrus mix from before. A little jolly rancher. Even though it’s light the peach lingers. Makes me dream of being somewhere warm by the ocean with a salty breeze.

Pairs with Cheez-It’s: I want to like it but, I just can’t. Some people might, but I think I’ll pass.

Reading about how these three became friends and embarked in the brewing business. They met over beer, beer events and over time realized how much they had in common. They’re also Brazilians of Asian descent, which in Brazil the word Japas is often used to describe them. They embraced it and made it a positive term and thus here’s the name of their brews. Every detail of their creations is very important to them from their ingredients to their packaging, and they are hands on. These are three intelligent, inspiring women who have proven they have the skills to stand out and excel in a male oriented industry, and are taking on the world and winning. As they best put it on their site, they are “proving more and more that beer has no gender.”

Frogs and Fernet

Letherbee Distillers
Fernet
35% ABV
Chicago, Illinois
Over 20 botanicals
Distiller: Brenton Engel (and team)

Medium coffee color with no milk color or some of that black smoked tea that I drink that everyone complains about. Poured and served neat and what a pow, zing, bam, to my nose. Insanely herbal but greatly welcome. There’s pine, dried orange peels, parsnips, rhubarb, cloves, spearmint, eucalyptus, and Christmas incense. Ok so let’s see what this swirl of scents taste like. It’s every bit of all of the above and more. A total wake up call with that starts with a bang, but then goes smooth and healing. You can sip this all night on it’s own or come up with a fun cocktail on your own, or if you have a hangover (last night was New Year’s Eve, ya know) then this may help.

Pairs with Cheez-It’s: No, no, no, no, NO!

In just 13 years, Brenton Engel went from being a moonshiner playing in Pool of Frogs to now where he has an internationally distributed and highly praised distillery. While he was still bartending he was tinkering with those first batches and tuning botanical recipes until he got it just right. He drifted from moonshine, to what has now grown into their whole line of Original Label Gin, Barrel-Aged Absinthe, Autumnal & Vernal Gins, Bësk, and Fernet. Letherbee (Let them be!) has also given back to the community. Back in March they temporarily paused their gin production to make hand sanitizer. Now that’s a good hearted thing to do.

Tacos Not Necessary

Off Color Brewing
Beer for Tacos
Gose style beer with lime juice and salt added
Malts: Pils, Wheat, Flaked Wheat, and Oats
Hops: Nugget
Secret Ingredients: Lime juice, Coriander, Pink Himalayan Salt
4.8% ABV (at least that’s what is printed on the can because the site says 4.5%)
Chicago, IL
Brewers and founders: John Laffler & David Bleitner
Acquired at Beer Boutique

Deep murky gold pour. The head disappeared pretty quick, leaving behind light bubbles. In a way it kind looks like a margarita. My nose says this is definitely a sour. There’s also a little mellow waft of corona (the beer), some lime and a little funk. Sipping and there’s tangy, sour, and then here comes the lime and coriander. Taking another sip and now I found that salt. Nice citrus too. Can see why this is a cocktail inspired beer because over time this grows into a sweet margarita. Yes, I can totally see why this would go great with tacos, but honestly, it’s great all on it’s own.

Pairs with Cheez-It’s: brings out a sweet smooth lime flavor.

Reading about how Beer for Tacos is brewed, and it turns out they make it from two different beers. One is made with a Belgian yeast strain and coriander and the other is fermented only with Lactobacillus. Then they blend them and re-ferment with lime juice. Due to the Lactobacillus, not only is this Gose tangy delicious, but it also makes it good for your gut.
