Dark plum with a ruby rim. Breathing in plums, prunes, dried and fresh cherries, tiny pops of blueberry, a poof of that iron smell of a very rare bloody steak, and a faint scent of lilac. First sip and this is damn elegant and rustic in a good way and now “Leather and Lace” is stuck my head (at least it’s a well loved song). There’s cherries, that iron taste that makes you want to embrace the wild side, blackberries, dried cranberries, and an earthy depth that doesn’t take it all over but just enhances all the flavors. It’s a beautiful dance of the two grapes.

For those of you that may have not seen my post from 3/15/21, let me introduce or reintroduce you to Vinica or VI.NI.CA. …established in 2007 by the above 3 guys, & the name came from Rodolfo’s 3 kids: Vittorio, Nicholas & Carola. I love all I’m reading about how they took abandoned land & created this beautiful pure farm/vineyard of 220 hectares (30 hectares for the vineyards, the rest are farm & woodland). They say the only ingredient they have added is healthy grapes. Well, I’m sure they aren’t thinking of the other ingredients of hard work & love. Also there’s more to love than just their grapes, olives, and all the vegetables on their farm. This family cares also about how the wine gets to you and what trace is left behind on this world. Instead of traditional corks, they have found 2 innovative ways to preserve their wines. For their white, rosé & oranges they use Stelvin screw caps, and their reds are protected with ArdeaSeal (evidently has links in it’s project stage to MIT). These final steps in the bottling process ensure their motto ”from the vineyard to your glass”. 🍷❤️

Deep hazy orange-golden with a white head that fades. Before even pouring, I can smell pineapple! After it’s in the glass that pineapple is still persistent, and then mango, and tangerine. It’s crisp and fresh and super nose friendly. Sipping that mango and pineapple along with papaya, lychee, and melon…it’s a delicious tropical fruit bowl with a shake of salt (I always put salt on fruit. Makes the flavor pop more). There’s also a little grass hanging out in the back This would be so good with pulled pork or actually pour it over the pork before you start slow cooking it. Yum!

Pairs with Cheez-It’s: GROSS! If you could only see how scrunched up my face is.

I’m a saltaholic, but I did not know the history of Moshio salt that ranges back 2,500 years. The labor intensive production had kind of been lost until a 1984 dig on Kami-kamagari isle unearthed a treasure trove of pottery, shakers, and clues to how the salt was derived from the seaweed/seawater process. There’s a modern adaptation now, but it’s still a whole lot of work. Now, to address Mizuharitsuke’s label. That’s a whole other can of worms or seawater. It’s a really truly gruesome form of crucifixion (from Japan) where you’re tied to a cross during low tide and then here comes the waves and then high tide. If lucky you pass on day one, if not…well you might be there a while to think about your transgressions. I think I’ll stay on good behavior while sipping my IPA and keeping my head above water.

Golden with green hints with lots of active bubbles and frothy foam. Apple sweetness greeting my nose, along with pineapple, lemon hints, and a teeny tiny funk after a bit. It’s a crisp, dry and delightful sip of apple, tangerine and others from the citrus bowl, lemongrassiness, and mellow lemon fizz that is not tart with malt.

Pairs with Cheez-It’s: NO NO NO NO NO! Gives a metallic taste…bleah

This majestic beast has a gentle side that you can kick back with but enough of a roar to knock down the spiciest of dishes. Would also be awesome with shishito peppers to cool that one in ten surprise, or even better yet Carolina Reaper Ribs. I can already feel the sweat down my neck.

Deep hazy raspberry pour that almost goes purple with a raspberry light pink head. There’s scents of milky/creamy raspberry candy, sugary marshmallow fluff, and vanilla. Sipping tart and sweet raspberry candy with a small squish of grapefruit/tangerine, the creamy center of an Oreo, and of course some vanilla. Oooh it’s like raspberry/strawberry cobbler with vanilla ice cream on top, yeah that’s it…well minus the biscuit dough part. This berry baby has a little weight or oomph to it. I definitely can’t drink more than one or I’ll be waddling. Just slowly sip and enjoy.

Pairs with Cheez-It’s: meh, doesn’t do much…all the flavors overpower it

Now this is one happy brewery pairing! I feel like I found the golden ticket or should I say egg, and on that note a levitating one. BTW these are limited, so if you want one…go get it now!

Ruby with blue/purple hues. Take a breath and there’s some forest funk, cherry, pinch of raspberry, very small bit of roses that fade, white pepper, light rabbit tobacco (yes, rabbit tobacco…I grew up in the country), and a little licorice. Raising my glass and tasting cherries, raspberries, blackberries, and blueberries mixed with one or two strawberries, earthy funk that leads to black pepper, baker’s chocolate, and a juicy twang. It’s lively as in like biting into a fresh handful of all the above fruit.

Pairs with Cheez-It’s: only makes it more smooth…but I like the tangy twang

The last Costador I encountered was Joan’s 2019 Chenin Blanc which was darn glorious, and gave me the chance to learn about his mountainous vineyards with wild boars. This indigenous Trepat is a completely other amphora delight. The vines are around 60 years old which make me feel like a youngster, and I think if these vines could talk what would their tales say. Would they whisper how the climate has changed? I bet they would speak lovingly of Joan since he has cared for them so well and organically over the years. Most of all they would probably tell us the history of the land and their heritage. You don’t have to wait for the vines, all you have to do is pour a glass and let your nose and tastebuds translate it all for you.

Beautiful orange gold with fine light bubbles on top, like champagne. Pop that cork and out comes scents of lemon, lime, tart apple, tangy sourdough, and a few stalks of hay. Sip and it’s a very bright wakeup hello to your tongue. There’s lemon, lime, crabapples, rhubarb, and  vinegar that is a good thing. Also a little twist of black pepper and funk on the backside. Just deliciously fresh and sour and reminds me of some natural wines.

Pairs with Cheez-It’s: meh

It’s really cool that Sidy Hanssens and her husband John Matthijs decided to take on the family tradition even though Sidy’s dad (Jean) did not teach her or her brother the business. Supposedly back in the 80s Jean even said “gueuze is dead”, but I beg to differ. This historical bottle is very much full of life. In fact this one was caught in the wild on a very hot day at Sugarburg. Sending a huge thank you to my dear friend Danielle for sharing it with me. I highly recommend you to pucker up with this glass of sunshine.

Hazy orange and deep golden streaked sunset, almost copper. Breathing in a delightful citrus blend of lemon, orange, tangerine, with a smidge of clove, coconut, a little fresh cut grass, and some wet granite. There’s a bit if Vanilla that plays hide and seek, and very light oak as it breathes…poof gone. Sipping and here comes orange, pineapple, shake that salt, and tangy tart sparks. Then all of a sudden there’s a touch of Kirby cucumbers,  and some white pepper. I know it’s neutral oak, but there’s a little vanilla of it hanging out in the background with a smoky ember. It’s like a fresh fun playground in my mouth.

Pairs with Cheez-It’s: makes it even more smooth and even a little creamy

This is my third Flat Brim wine, and each has been so unique and all delicious. I guess it’s due to them being an urban winery and able to source the best grapes from growers they trust and know are sustainable (some are also organic and others biodynamic). Having such a beautiful diverse painter’s palette to work with has to be an amazing opportunity, and this bottle is a great expression of their creativity. One more thing to add, “Not Basic 2020” is a wine that can win over your beer loving friend that consistently says NO to wine. Give ‘em a little nudge and once they try, they’ll be sold.

Hazy orange gold that has a lot of active movement and a small white head. Pouring and here comes sniffs of pineapple, tangerine, mango, and a little vanilla. First sip and well that’s a wakeup call and It’s all there… the pineapple, vanilla, and the creaminess. But that’s not all, there’s lemon, kumquats and a sliver of mango. I’m really digging this Milkshake IPA.

Pairs with Cheez-It’s: uh no ack horrible

So I find myself trying another SC beer, and man have things changed since I was a kid there. I remember bars not having free pour and having to get mixed drinks made from mini bottles. Now look at my childhood home state. There’re breweries popping up everywhere and they are damn good. Westbrook has a taproom with a rotation of 22 taps, and if you want to just pop by and head home, there’s bottles, cans, and crowlers. There’s one can I wish I could’ve gotten my hands on. They collaborated with the South Carolina Aquarium and made a DIPA “Drinks Well with Otters”. You have to see the video on FB Watch. Oh and for those of you who are worried, as it says in the video, “No otters were intoxicated during the making of this video.”

Plummy cranberry cocktail that’s so inviting. First scent out of the gate is smoked salt rapidly followed by raspberries, watermelon, strawberries, and lemon zest. Sipping and again there is that delicious smoke, raspberries, watermelon, young strawberries, a tangy citrus squirt, and a whole wild blackberry. Also a shake of salt and white pepper that balances out this refreshing and crisp summer lightly chilled red happiness.

Pairs with Cheez-It’s: oh yeah, pair this baby up. It totally makes everything heighten.

This is your bottle of summer love that originates from Mariona and Albert falling for each other while studying winemaking. I always enjoy a little bit of romance with my wine. Now they’re creating organic beauties like this Trepat that will have your heart singing. Let’s follow those trumpeting pink elephants and find out what groove they’re on. I bet it will be magical and a little bit Dizzy!

Bring on the summer heat because this refreshing can will keep you cool.

Well, well, well…this may have me thinking of booking a ticket in the future to my home state. If this sour ale is anything like the rest of Edmund’s Oast Brewing Co.’s brews then I’m all in. Also what a restaurant menu (they have a wood-fired brick oven and a Polish smokehouse)…there’s house cured 2 year speck (I ❤️ speck), homemade hotdogs, pizza (like: Peach & Ricotta with House-made cayenne salami, fresh basil & honey), and two of my favorite things in the world…PIMENTO CHEESE and BOILED PEANUTS! I’m starving right now and would love all of that ASAP. Oh and might as well, throw in a few cans of their Sour Sherbet. Yum!
